Cinnamon Bun / Kanelbulle
Qualifying as one of the top classics in the top 10 is the “Kanelbulle”. With its roots in the 20’s this treat became a household bake in the 50’s once getting hold of ingredients got easier post the world war.
There is a lot of Swedish food to celebrate but there is nothing like our lovely cinnamon bun. Swedes can reminisce in the smell of freshly baked cinnamon buns from their childhood. If it wasn’t your mum (or dad) baking it, you might have experienced the smell at your grandmother’s or a friends place. And you knew, it soon will be time to sit down and have a fika with yummy warm cinnamon buns and a glass of milk.
There are heaps of different shapes and twists on the cinnamon bun. The classic one is filled with butter, sugar and cinnamon and have the shape of a spiral.

Fact: It's estimated that 7million buns are sold on the day and that 51% of the population eats one, or two. -
Vanilla Bun / Sockerbulle
Qualifying in to the top 10 fika classics is the “Karlspader”, "Sockerbulle" or "Vaniljbulle". There's a Swedish saying that goes: "Kärt barn har många namn" translating as: A loved child has many names. And that's the case with this magical bun.
The dough uses a different base than the rest of the buns giving it a heavenly texture. It's a perfect Fika Bun, meaning the perfect bun to have with your afternoon coffee.

Cheese Bun / OstbulleThe Cheese Bun is our savoury 2020 addition to the bun crew. A cardamon bun baked with cheese and sour cream. Sprinkled with sea salt and a Scando favourite - parsley.

Cardamom Bun / KardemummabulleThe Cardamom Bun is filled with cardamom (surprise!) and is the closest cousin to the Cinnamon Bun. It's sometime referred to as a knot because of the baking technique used, twisting long strips in to a knot. This bun is decorated with granulated sugar and coarsely ground cardamom seeds adding a lovely texture and crunch to the soft bun.

Vegan Cinnamon Bun / KanelbulleThe Vegan cinnamon bun is made with the same traditional methods (and love) as our original cinnamon bun. We've swapped the butter for a vegan plant based butter - topped with pearl sugar. Yum!

Danish / Wienerbröd
Can't decide between custard or berry, well then this Danish is your go to!
This is sweet laminated pastry who's concept was brought to Denmark by Austrian bakers in the 1850's. The recipe was partly changed and accommodated by the Danes to their liking, and has since developed into a Danish specialty which was later adopted across all the nordic countries including Sweden.

Semla Bun
Available at Fika January - March
This cardamon bun, nutty paste and gooey cream is a heavenly combination, especially when you get it all in one bite.
The tradition of eating Semla goes all the way back to the Middle Age. One day before the fasting started people normally had a big feast and a Semla for dessert. It helped to fill them up for the 40 days long fasting that went on to Easter. Originally it was just a bun, overtime the cream and almond paste got added.
The day got called Fat Tuesday and is now the official Semla Bun day.
In Sweden we eat 40 million Semla buns a year, with 5 million of those sold on Semla Bun Day alone. It is the second most popular pastry after the classic Prinsess cake. .
Back in the days bakeries could get fined if they started to bake the Semla before Fat Tuesday. In modern time the official Semla premiers on Boxing Day. Some people still stick to the tradition of only eating Semla on Fat Tuesday but most people just can’t wait. The Semla is just too good to have once a year.
It is hard work to be a Semla. Every year a lot of Semla-experts like to have their say. It has to be moist, sweet, generous, small, big, rich, elegant and the list goes on. Newspapers normally have an expert panel to crown the Semla of the year.

Saffron Bun / LussebulleAvailable at Fika: December
A warm, sweet, mouth melting, yellow little saffron bun richer than gold.
Saffron buns are a sweet Christmas bun spiced with saffron and a true favourite for many Swedes. It takes 150 000 flowers of Crocus Sativus to make 1 kilogram of saffron and that’s why saffron is more expensive than gold per gram.
The saffron bun originally called Lusse-cat is named after the devil Lucifer. The story goes back to the 1600 century when people believed that the devil showed up in a shape as a cat. Lucifer is said to be afraid of the light so they baked catlike buns with saffron, a bright colour to keep the devil away. It was common to give saffron buns to children in protection of the devil. Today the bun is associated with celebrating Saint Lucia the 13th of December and many Swedes believe that the name Lusse-bun comes from Lucia.
Today saffron bun means Christmas and its something you would have with your fika in December or for Advent. Each year these popular Christmas buns are baked and sold earlier and earlier. It seems like the craving for a warm yellow saffron bun is too powerful to resist, to be able to wait all the way to December. -
Polly's Brownie
This isn’t a classic. This is just one of our own marvellous inventions. "Polly" is a Swedish chocolate covered, chewy foam drop flavoured with vanilla, arrack and butter toffee. We combined grandma’s old brownie recipe with polly and voila - the Sydney's top 3* brownies was born. (*some have told us)

Havreflarn / Oatmeal Crisp Cookies
The Oatmeal Crisp Cookie or 'Havreflarn' are part of the traditional 'seven cookie' series, or "sju små kakor" as it's called in Swedish. We bake them fresh at random!
The Swedish tradition of serving seven different types of cookies at a dinner or social gathering started in the 1900s. The recipes have developed over hundreds of years. When a guest came to visit, a Swedish wife was expected to serve up seven kinds of home made cookies on a platter. If she made more than seven, it would be seen as showing off, if she made less, it was considered stingy. The more gourmet and complex the baking process, the higher regarded her seven cookies would be.
When coffee became legal to drink again in 1822 (crazy King Gustav III actually tried to ban it), the custom of serving småkakor (small cookies) really took off and the Fika culture slowly etched itself into the Swedes hearts.
We have a soft spot for this tradition at Fika Swedish Kitchen and our pastry chefs love trying new småkakor recipies each week. We’ve put together a little tasting of our favourite seven. Enjoy!

Choc Oat Ball / Chokladboll
Qualifying in to the top 10 fika classics is “chokladbollar". This treat has been around since 1943 and is, as the name describes it, a chocolate flavoured, oat ball with a hint of coffee and pinch of salt. You’ll find them in Sweden and Denmark and there won’t be many coffee shops you’ll visit in Sweden that don’t have them on offer. They come rolled in coconut or Swedish pearl sugar and there’s a constant discussion on which version is the favourite. What do you think? Coconut or Pearl Sugar?
